Let's go surfin', Ride the big wave.
Work on our suntans and try to behave.
Late in the day the breezes are calm.
Eat mahi, sip tropical chard under the palm.
Too much chardonnay & you might dance all night.
Then you're in position to go surfin' again,
'Cause it's already daylight!

THE STORY:

Our 2007 unfiltered Chardonnay was arguable the best white wine I've ever made. The bar was forever raised and our next job was to equal or exceed that effort in 2008. We used the same vineyard sources (80% Celilo/20% Bishops), the same 500 gallon French oak oval, the same yeasts, and techniques, and voile'...The result seems to be quite similar with possibly a more sustained acidity to compliment your great meals. Look for a wonderful bouquet with liquid luscious lemon. The weight is heavier than it looks. The usual tropical fruits are backed up by remarkable mid-palate created by lees-stirring. The long sustained acids and smooth oily tannins are products of combining great fruit with the big oak oval. This is old school winemaking.
